Super quick and easy lunch

Lunch used to be a stumbling block for me when I ate carbs, I work from home and live in the country  so was forced to make my lunch every day missing the luxury of picking something up. I used to get starving then have a toasted sandwich or similar.

This is now my go to quick and easy keto lunch

Caprese Salad

 

1 tomato sliced

2-3 bocconcini balls sliced

4 slices of prosciutto

Ripped basil leaves (if you have them, I didn’t that day obviously)

A drizzle of olive oil

and eat it. No cooking just slice and eat – heavenly lazy lunch.
