It is not hard to make keto meatballs and they are pretty versatile. I like cooking things that I get more than one meal out of so meatballs fit the bill.
Recipe
500gms Pork & Beef mince (available as one pack in Coles)
1 egg
1 garlic clove
1 finely chopped onion
1 tsp Crushed Fennel seeds
2 tblsp psyllium husks (this acts like breadcrumbs, it does make them quite dense but provides fibre)
1/4 cup of water (for psyllium to absorb)
Salt and pepper.
Method
Mix everything together in a bowl, shape into your preferred size balls
Brown off in a pan, ideally one that can go in the oven too.
Once browned add tomatoes, I like to blend them until they are a puree but up to you.
Add green beans (or other green veggie that you prefer)
Put lid on and put in oven at 180C for 30mins.
From there I put a couple in a bowl and add cheese and grill for 7 mins to get the cheese gooey

Then the next day I sliced one up with some salad and cold chicken
