Keto Pad Thai


Always a favourite I added a Pad Thai to the repertoire.

This one was made with pork but Chicken or prawns or tofu, whatever floats your boat.

Serves 2-3


300gm meat of choice

300gms shredded cabbage

1 cup of greens

half a bag fresh bean shoots

crumbled peanuts – or cashews/almonds if you don’t include peanuts in your keto.

1 bag Konjac noodles or zoodles

Coconut oil

1/2 a lime


3tablspn low sugar tomato sauce

3tablspn soy sauce or coconut aminos

6 drops of stevia sweetener

teaspoon of crushed dried chilli (to taste preference)

2 tablspns fish sauce


Cut up all ingredients in readiness for a fast cook.

If using kojac or zero carb noodles, rinse well for at least 2 minutes.

Heat a tablespoon of coconut oil in a wok or large frypan until hot. Fry off protein and remove from wok.

Add in vegetables and cook for 2-5 minutes. Add in sauce, noodles and protein fry and mix well for a further 3 minutes. Serve into bowls and add crushed nuts and a good squeeze of lime juice.
