Cauliflower Fritters


This is the first on a series of Cauliflower recipes. Cauliflower is a staple in Keto and fortunately I love it.

So to kick off the Cauliflower recipes here is my Fritters it is a fine batter not grainy.


Makes 8 pieces

8 decent cauliflower florets about a small fist size each.

3 tablespoons almond flour

1.5 tablespoons coconut flour

2 eggs


Traditional – add parmesan cheese

Indian – add cumin

Italian – add ground fennel or oregano


Boil or steam cauliflower until just tender
Drain well let cool slightly

Using Nutribullet or blender put all items in and blend for 30-60 seconds until smooth. This makes the almond flour become smooth and not grainy.


Heat deep fryer with your oil of choice, I use lard. To 170c/340F

Roll cauliflower florets in batter until covered and put straight in the fryer, you will need to do 2 batches as you don’t want to over crowd the fryer. They take about 3 minutes or until a rich golden brown.
