5 Minute Keto Donuts

Sometimes you just have a massive craving for donuts and oh yeah I’m going to find a way. So here is a quick treat best served straight away while hot but are also good the next day. Doing it in the blender makes all the difference, giving you a really fine crumb like the real thing.

Ingredients 
Makes 8 small or 6 regular

Batter

6 heaped tablespoons of almond meal
1 teaspoon baking powder
2 eggs
2 flat tablespoons of butter (softened is fine otherwise melt it first)
2 tablespoons sweetener of choice (to taste)
1/4 tsp of Vanilla extract or cinnamon (whichever you prefer)

Toppings

Option 1 Cinnamon Sugar – Mix  2 tablespoons cinnamon and 2 tablespoons granular sweetener together in a small bowl and toss donuts in, for cinnamon sugar

Option 2 Glaze – Melt 2 tablespoon butter and 1 tablespoon sweetener until sweetener dissolved, add a drop or two of vanilla essence, let cool until starts to thicken. Dip hot donuts into glaze.

Method

Batter – Put all ingredients in blender/nutribullet and blend for 30 seconds. Pour into silicone donut pan. Microwave on high for about 2 mins (depends on Microwave) until risen and set, they may still be slightly shiny but not wet.

Dip immediately into toppings and enjoy.

You can also do them in the oven, add an extra tablespoon of almond meal if doing oven and have it on 350/180 for 12-15 minutes.
