So in Australia we have Noshu donuts which are keto friendly and I was very excited to try them. I finally found them and they are super expensive $4.50 each, tiny and for me a blah meh. So going on from my first Keto donut recipe I have created Chocolate glazed chocolate donuts a little like Noshu
Ingredients
Makes 8 small or 6 regular
Batter
6 heaped tablespoons of almond meal
1 teaspoon baking powder
2 eggs
2 flat tablespoons of butter (softened is fine otherwise melt it first)
3 tablespoons sweetener of choice (to taste)
2 tablespoons good quality cocoa powder
1/4 tsp of Vanilla extract or cinnamon (whichever you prefer)
Chocolate Glaze
5 squares 90% Lindt chocolate
1/4 cup cream
1 Tblspn Sweetener Natvia (or to taste)
Method
Batter – Put all ingredients in blender/nutribullet and blend for 30 seconds. Pour into silicone donut pan. Microwave on high for about 2 mins (depends on Microwave) until risen and set, they may still be slightly shiny but not wet.
To make Chocolate glaze
Mix cream and sweetener in a small bowl.
Add chocolate and microwave in 30 sec bursts stirring in between until melted and smooth. Usually 90 seconds all up. Allow to cool slightly then dip donuts into glaze.
They last well in the fridge for a couple of days too, if they last that long.
You can also do them in the oven, add an extra tablespoon of almond meal if doing oven and have it on 350/180 for 12-15 minutes.
